After a couple of weeks experimenting and researching, I've come to find out that living Gluten Free and even restricting my diet is not as bad as I originally feared. (Since Christmas I have restricted my diet to be Caffeine free, Sugar free, Dairy Free (almost) and Gluten Free). After a week of eating nuts, sweet potatoes and chicken, I decided to get creative, do some research and start living again within the realm of a new regime proven to make my body feel better. So, I have stocked up on Rooibos teas, read The Gluten Free Bible and subscribed to these great blogs:

So this morning I created my very first adaptive recipe for Gluten Free Oatmeal Waffles and topped off with my favorite Syrup concoction. (yes. its a little bit of a cheat for me but its Sunday and I will get back to being totally good tomorrow). Even if you are not Gluten Free these recipes are REALLY GOOD. Promise romise. Who knew good for you food could be so good! (And I am a girl who likes her bread products).
Gluten Free Sunday Morning Waffles
1 cup Gluten Free Baking Mix ( I used Bisquick but Pamela's Baking and Pancake Mix is fabulous)
1/2 cup Gluten Free Oats ( Bob's Red Mill)
1 tbsp. vegetable oil ( or you could substitute applesauce)
2 large organic free range eggs
3/4 cup almond milk (or regular milk works too)
a dash of salt.
Mix all ingredients together in large bowl and pour 1/2 cup at a time into a prepared waffle iron. Makes about 6 waffles.
Here is the fabulous finger licking Sizz-Rup recipe to slather on top! I also garnished with walnuts and golden raisins. Heaven!!

so right now i think you're totally nuts ... i couldn't have given up my favourite vices ... sugar (in well everything) ... pepsi ... & cheese! but the waffle does look really tasty (even better with a scoop of vanilla ice cream ... hehehe).

lol!! you crack me up Laura! that is so funny. i have a serious sweet tooth too but it is affecting me adversely pretty severely this past year. i don't know if it is metabolism, hormonal or just the fact that im turning into an old lady! you are so cute and young and fit that you probably could get away with dollops of ice cream and no one would notice. esp. now that you are eating for two! how is that going btw? when are you due?

That looks good! I'm on a semi-vegan diet and trying to cut back on sugar, so I'm definitely going to try this recipe. Thanks for sharing!
